They use worms to compost the material. The idea is to "turn on their heads" what bad intestinal worms do by having "good worms" form compost that can be used to increase crop yields for those whose nutritional intake was compromised by the bad worms - making worms work for us instead of against us. When done correctly, their is no odor connected with this process. It is especially useful in agricultural areas of the world.
